Banana fritters are a childhood favourite of mine. Crispy on the outside, soft and sweet on the inside, yummm. These are definitely a once in a while treat for me as they are very moreish! They are commonly eaten as a breakfast food, but can also be enjoyed as a snack or dessert. Interested in this recipe? Keep reading below.
You will need (Serves 2):
- 2 bananas
- 1 tsp of cinnamon
- 1 tsp of vanilla Extract
- A pinch of salt
- 1 tbsp baking powder
- 100g plain flour
- 2 tbsps water
- 2 tbsps dark brown muscovado sugar
- 1 tsp ground nutmeg
Method:
- In a bowl, mash the two bananas. Next, add the sugar, cinnamon, vanilla and nutmeg, and combine well.
- Then, add in the baking powder, flour and salt and combine well again. Add the water and mix well so that your mixture is like a thick pancake batter consistency. Add more water if needed.
- Heat a frying pan with the oil until the oil is very hot (the hotter the oil, the crispier the fritters). Spoon 2 tablespoons per fritter ensuring they are not too thick (about 1-2 cm thick is what you should be going for). Fry until golden brown on each side. Transfer to a plate lined with kitchen roll to soak up the excess oil. Serve hot.
