Banana fritters are a childhood favourite of mine. Crispy on the outside, soft and sweet on the inside, yummm. These are definitely a once in a while treat for me as they are very moreish! They are commonly eaten as a breakfast food, but can also be enjoyed as a snack or dessert. Interested in this recipe? Keep reading below.

You will need (Serves 2):

  • 2 bananas
  • 1 tsp of cinnamon
  • 1 tsp of vanilla Extract
  • A pinch of salt
  • 1 tbsp baking powder
  • 100g plain flour
  • 2 tbsps water
  • 2 tbsps dark brown muscovado sugar
  • 1 tsp ground nutmeg

Method:

  1. In a bowl, mash the two bananas. Next, add the sugar, cinnamon, vanilla and nutmeg, and combine well.
  2. Then, add in the baking powder, flour and salt and combine well again. Add the water and mix well so that your mixture is like a thick pancake batter consistency. Add more water if needed.
  3. Heat a frying pan with the oil until the oil is very hot (the hotter the oil, the crispier the fritters). Spoon 2 tablespoons per fritter ensuring they are not too thick (about 1-2 cm thick is what you should be going for). Fry until golden brown on each side. Transfer to a plate lined with kitchen roll to soak up the excess oil. Serve hot.
