Ingredients:

For the apple sauce: 

  • 5 large apples (Braeburn/Cooking apples)
  • 4tbsp of Butter (any type of butter)
  • 4tbsp of White granulated sugar
  • 2tbsp of Cornflour
  • 4tbsp of Water
  • 2tsp of Cinnamon
  • 2tsp of Nutmeg

For the crumble:

  • 100g of Oats
  • 400g of Plain Flour
  • 300g of Butter (leave in the fridge)
  • 200g of White Granulated Sugar
  • 2tsp of Cinnamon
  • 2tsp of Nutmeg

For the Toffee Sauce:

  • 120g of Butter
  • 120g of Light brown sugar
  • 100ml of Heavy Cream
  • 1tsp of Black treacle

Method:

Apple sauce:

  1. Rinse, peel and slice the apples into small rectangular chunks (or slice to your size preference). Once all is chopped, squeeze the juice of a lemon over the pieces to avoid the apples browning.
  2. Heat your pan and add the butter. Once melted, add the apples chunks to the melted butter and sauté until soft. Then add the sugar and continue to stir (taste the mixture and if it isn’t sweet enough add more sugar to your liking, however the toffee sauce will later add more sweetness!)
  3. Add the cornflour and water to a bowl and mix together until smooth. Then pour into the pan and continue to stir until the mixture thickens.
  4. Lastly add the cinnamon and nutmeg to the mix for flavour and leave to cool.

Toffee Sauce:

  1. Heat a small pot and add the butter and sugar, mix together until they both melt and make sure the mix does not burn.
  2. Slowly pour the cream into the mixture, stirring as you go and allow it boil. Then add the black treacle and continue to stir as the mixture boils for about 5-10 mins then leave to cool.

Crumble: 

  1. Add the oats and flour to a large mixing bowl and then the cinnamon and nutmeg.
  2. Cut the butter into small cubes and then add to the dry ingredients. Mix everything together by hand with a wooden spoon or using a cake machine/ beater until the mixture combines and starts to crumble.
  3. Add the toffee sauce to the apple mix and fold in together into a large ceramic bowl (The toffee sauce is optional!) It will taste just as good without.
  4. Sprinkle the crumble evenly over the mix. Any left over crumble can be frozen and used at another time.
  5. lastly, sprinkle some Demerara/Brown sugar on top (optional).
  6. Place the dish in the oven for about 40mins at 200 degrees.
