Ingredients (Serves 2):
- 3 ripe bananas
- 3 eggs
- 50g self raising flour
- 1 tsp vanilla extract
- 1 tbsp baking powder
- 1 tsp bicarbonate of soda
- 2 tbsp fat free natural yoghurt
- 50g berries to top
- 1 tbsp Sweet Freedom syrup
- 1 tsp salt
- 1 cal cooking spray
Method:
- Place the bananas, eggs and vanilla extract in a blender, and blitz until smooth.
- In a large bowl, place the flour, baking powder, bicarbonate of soda, and salt, and combine together. Add the banana and egg mixture, and whisk until smooth and lump-free.
- Mist a large pan with the cooking spray and place on a medium heat. Using a ladle, scoop up some batter and pour onto the middle of the pan. Cook until bubbles start to form – that is when your pancake is ready to be flipped.
- Once all of the pancakes are done, stack on top of one another, top with the yoghurt and berries, and drizzle on the syrup.
