Ingredients (Serves 2): 

  • 3 ripe bananas
  • 3 eggs
  • 50g self raising flour
  • 1 tsp vanilla extract
  • 1 tbsp baking powder
  • 1 tsp bicarbonate of soda
  • 2 tbsp fat free natural yoghurt
  • 50g berries to top
  • 1 tbsp Sweet Freedom syrup
  • 1 tsp salt
  • 1 cal cooking spray 

Method:

  1. Place the bananas, eggs and vanilla extract in a blender, and blitz until smooth.
  2. In a large bowl, place the flour, baking powder, bicarbonate of soda, and salt, and combine together. Add the banana and egg mixture, and whisk until smooth and lump-free.
  3. Mist a large pan with the cooking spray and place on a medium heat. Using a ladle, scoop up some batter and pour onto the middle of the pan. Cook until bubbles start to form – that is when your pancake is ready to be flipped.
  4. Once all of the pancakes are done, stack on top of one another, top with the yoghurt and berries, and drizzle on the syrup.
